Black Bean and Mango Salsa

Good served over chicken or pork, or combined with cheese in quesadillas.
Ingredients
- 2 cups fully-cooked black beans
- 2 mangos, diced
- 1/2 red onion, diced
- 2 Tbs lime juice
- 2 Tbs cilantro, minced
- 2 tsp salt
- 1 tsp cumin
Directions
- Combine all ingredients. Refrigerate until serving.
- You can eat this right away, but the flavor is best when it’s prepared at least a few hours in advance.
